Bambino opened in the heart of East Austin in March 2024 and is the sophomore restaurant from seasoned restaurateur and chef duo Adam Orman and Fiore Tedesco of L’Oca d’Oro. Bambino weaves together the spirit of the 80s with a grown-up sensibility–arguably bringing to life 10-year old Fiore’s vision of a pizzeria. With reverence for the integrity of the dough and ingredient sourcing overall, the pizzeria represents a culmination of Fiore’s life in food, from his start as a pre-teen shaping rolls at a cousin’s bakery through a career in fine dining–all accompanied by 30 years of making fresh mozzarella and a fidelity to excellence.
Bambino takes great care in how we source ingredients like the organic, Central Texas flour we get from Barton Springs Mill. We purchase from farms and producers that also treat their workers and animals humanely.
Building upon the progressive restaurant model they set forth at L’Oca d’Oro–and Orman’s role in co-founding Good Work Austin, where he now sits on the board–the pair again incorporate employee-focused business practices at Bambino, including a 20% service charge to offer direct primary care health memberships, subsidized mental health benefits, and support competitive wages for all employees!
